My husband’s Aunt Kathy came to town when we were still in Arizona and made this soup. It was amazing and my mother-in-law made a crock pot version that I thought you all would enjoy. Aren’t crock pot meals the best! There are so many reasons to love them, right? I love them on busy days and on lazy days. Sometimes on a fall weekend you just want to sit back and be snuggley and lazy with the rest of the family.
this soup has both warm salsa and jalapeno so it warms you up but without too much spice. It’s perfect for those chilly lazy days. 🙂
Ingredients
- 1 T olive oil
- 2 lbs boneless pork loin cubed
- 1 large onion chopped
- 2 garlic cloves chopped
- 7 oz. can of diced green chilies
- 1 jalapeno diced
- 1 poblano pepper diced
- 1 t cumin
- 1 t salt
- 1 t pepper
- 4 c. chicken stock
- 16 oz. Salsa Verde
- 29 oz can White Hominy drained
- 1 bunch of fresh cilantro chopped for topping
Instructions
- heat olive oil in a pan over med high heat
- add pork cook until brown
- add onion, jalapeno and poblano peppers to the pan and saute until softened
- add garlic and cook about 1 min
- season with salt, pepper and cumin
- add pork mixture to crock pot
- pour in chicken stock, salsa verde and hominy
- cover and cook: Fast High for 2 hours and low for 1 Slow low for 6 hours

Oh my gosh this soup turned out amazing. I did take a lot of shortcuts. I used a small pack of birds eye frozen onions and peppers, used (2) jalapeno’s in place of the poblano, had a big can of chicken broth so used all 49oz’s.Used trader Joes roasted chicken pieces in place of pork, added a frozen lemon cube (that I had in freezer saved from juicing lots of lemons a few months back). Threw everything into crockpot “as is” no sauté or prepwork. Garnished with cilantro and shredded cabbage. Truly delicious!!! and very pretty!
